01 · Wedding catering

What was asked

A buffet for 460 on open ground with no kitchen, limited power, and a schedule that could not move because the ceremony started at 18.00.

What we did

  • 14 buffet dishes plus 3 live stations: sate lilit, mie goreng and es campur
  • A field kitchen built the day before on four small generators rather than one big one
  • Three site visits, the last five days out to check the truck access road
  • Portions built at 1.15 times the headcount, because ceremonies always bring guests nobody counted

What came out of it

  • First plate out 4 minutes after schedule, inside the 15 minute tolerance we agreed
  • Waste came in at 6% of production, sent home with the family in containers we brought
  • No queue longer than 5 minutes at any station across 4 hours of service
02 · Canape catering

What was asked

A six hour standing event for a mixed room of press, buyers and creators. The client wanted everything eatable one-handed while holding a glass.

What we did

  • 9 canapes, all single bite, plus 2 live stations
  • Built as 4 vegan, 2 vegetarian and 3 gluten free out of the 9
  • An ingredient card on every tray, so guests never had to ask a staff member
  • Production split into three waves so no canape sat longer than 40 minutes

What came out of it

  • 1,620 pieces went out and 91% were eaten across six hours
  • Zero allergy incidents, because every card was up before doors opened
  • The client booked us again four months later for an event in Ubud
03 · Private dining

40th birthday, closed dinner

What was asked

Seven courses for 14 in a villa kitchen with two burners and one small oven. Two guests severely allergic to shellfish, one vegan.

What we did

  • The menu was rebuilt once the allergy form came in, not just stripped of an ingredient
  • Three courses part-prepared in the Sanur kitchen so two burners would carry the night
  • Chef and two service staff on site at 15.00 for a 19.00 dinner
  • Vegan plates kept on their own board and pan the whole evening

What came out of it

  • All seven courses landed 12 to 18 minutes apart, as planned
  • Villa kitchen finished and cleaned by 23.40, before the last guest left
  • Their villa manager became a regular client, nine bookings so far

What was asked

Nine meals over three days for 65 people from six countries, with the dietary list only landing complete four days before they flew.

What we did

  • Nine sittings, no dish repeated exactly across any of them
  • Every sitting carried 3 full vegan options and 2 gluten free
  • One of our coordinators stayed on site for the full three days
  • The ingredient list went to the client every morning for anyone who wanted to check

What came out of it

  • 585 covers went out on time across nine sittings, none of them late
  • 12 people with restrictions were fed without an obvious separate plate
  • The same company booked us again for their 2026 retreat
Three days, nine meals, 65 people from six countries, and not one sitting ran late. The thing that surprised me was the ingredient list arriving every morning without me asking for it.
